Amai Proteins designs novel proteins fit for the mass food market. The first application is a hyper-sweet Designer Protein that enables to significantly reduce sugar without compromising taste or cost. First, Amai (means 'sweet' in Japanese) applies Agile-Integrative Computational Protein Design (AI-CPD) which mimics proteins that grow at harsh environments (e.g. Dead Sea, hot springs or acidic swamps) with functionalities that are needed in the market (e.g. sweet proteins). Second, the proteins are produced by Precision Fermentation, a scalable and sustainable production method which is in essence a brewery in which one adds harvesting to get a GMO-free pure protein. Third, Amai's food technology team which includes a professional taster panel makes consumer packaged goods.
